Buttermilk pie

This is the kind of dessert that feels wholesome enough to nibble out of the pan for breakfast. I mean, look at the ingredient list — it's practically a muffin!
Buttermilk pie
1 c. sugar
1 c. buttermilk
1/2 c. flour
1/3 c. butter, melted and cooled slightly
1 t. vanilla
3 eggs

Preheat oven to 350. Combine ingredients and pour into greased pie plate. Bake 30 minutes, or until set.

Every time I make this, it ends up separating into subtle but definitely distinguishable layers and the top always crinkles. It's not curdled, and the butter had definitely cooled enough that it didn't cook the eggs before it baked (see cross-section: perfectly smooth). I can't explain it, but I think the mystery makes it even more delicious.
